Mi xian

Mi xian Chinese: 米线; Pinyin: mǐ xiàn) is a type of rice noodle from the Yunnan Province of China. It is made from ordinary non-glutinous rice, and it is generally sold fresh rather than dried.
It is served in various ways, one famous one being guoqiao mi xian (过桥米线; pinyin: guòqiáo mǐ xiàn; literally "across the bridge rice noodles"), which is generally considered to be Yunnan's most famous dish.
The processing of mi xian in Yunnan is unique, involving a ferment process, and the tastes of mi xian have two types, namely ganjiang mi xian and suanjiang mi xian. The fresh Mixian smells fragrant, different from other kinds of rice noodle in China and Asia. Mi xian is very popular in Yunnan Province, it can be found in every street and every village in the province.
